Oven temperatures

Celsius is shown to the degree and rounded to the nearest 10, the way most recipes write it. Gas mark 1 is 275 °F and each mark adds 25 °F; mark ½ is 250 °F and mark ¼ is 225 °F.

For a fan (convection) oven, many recipes suggest setting it about 20 °C (25 °F) lower.

About these numbers

US measures, rounded for the kitchen.

  • Cups, tablespoons, teaspoons, fluid ounces, pints and quarts are US customary measures: 1 cup is 236.588 ml, 1 tablespoon 14.787 ml and 1 teaspoon 4.929 ml.
  • Recipes from the UK or Australia may use a 250 ml metric cup, an Australian tablespoon holds 20 ml, and a UK (imperial) pint is 568 ml. This converter uses US measures only.
  • Ounces and pounds are weights: 1 ounce is 28.3495 g and 1 pound 453.59 g. Fluid ounces measure volume.
  • There's no cups-to-grams conversion here: how much a cup weighs depends on the ingredient (a cup of flour weighs much less than a cup of sugar), so volumes convert only to volumes and weights only to weights.
  • Results are rounded: whole numbers from 100, one decimal from 10, two from 1 and three significant digits below 1. Cups, spoons and ounces also show the nearest measuring-cup fraction.
