Can you freeze pie crust? How to make it ahead
Pie dough is the one part of Thanksgiving dessert that has nothing to do with the day itself. It needs cold butter and a clear stretch of counter, and the Wednesday before Thanksgiving has neither. This post covers how far ahead you can make it, which shape to freeze it in, how to bake or thaw it, and the one pan that shouldn't go from the freezer straight into a hot oven.

The quick answer
Yes. Pie crust freezes well for about 2 months, wrapped tightly, and keeps 2 to 3 days in the fridge. For Thanksgiving on November 26, dough frozen any time from the start of October is fine. The easiest form is rolled out and pressed into a metal pie pan, because it can be filled and baked without thawing.
- Disks take the least freezer space, but they need a night in the fridge before you can roll them.
- A shell frozen in a metal pan goes straight into the oven. Add a few minutes to the bake.
- Glass pie plates shouldn't go from the freezer into a hot oven: let them come to room temperature first.
- Store-bought refrigerated crusts thaw in 60 to 90 minutes on the counter. Don't microwave them frozen.
- Once dough has thawed, bake it. Don't put it back in the freezer.
How long does pie dough last in the fridge and freezer?
Two to three days in the fridge and about 2 months in the freezer. King Arthur Baking's pie crust recipe gives unbaked dough 2 days in the fridge and up to 2 months frozen, both well wrapped. Its Thanksgiving prep guide stretches the fridge to 3 days, and Gold Medal Flour also gives an unbaked crust 2 months in the freezer.
The 2 months is about taste and texture. The USDA says food kept at a constant 0°F (−18°C) stays safe indefinitely and only loses quality with time, so a disk you find in January won't hurt you. It may taste stale, though, and the wrapping is what holds that off. Press plastic wrap against the dough, then seal it in a freezer bag with the air pushed out.
| What | Fridge, 40°F (4°C) or below | Freezer, 0°F (−18°C) |
|---|---|---|
| Homemade dough, disk or shell | 2 days (King Arthur recipe), up to 3 (King Arthur prep guide) | About 2 months (King Arthur, Gold Medal Flour) |
| Store-bought refrigerated crust | Until the date on the package | Thaw 60 to 90 minutes before unrolling (Pillsbury) |
| Unbaked fruit pie, assembled | Bake or freeze it | Up to 3 months (Gold Medal Flour) |
For Thanksgiving 2026, dough made this week and frozen is good until early January, which covers Christmas pies too. Fridge dough for a Wednesday bake can be made on Monday the 23rd.
Freeze it as disks, rounds or shells in the pan?
Shells in the pan, if you have the freezer room. A disk has to thaw overnight, then be rolled, fitted and chilled again, all in the week you were trying to clear. King Arthur's 2025 post on freezing pie crust argues for rolling the dough into its pan before freezing for that reason, and K-State Research and Extension agrees that pastry shaped in the pan doesn't need thawing before it's baked.
Which shape suits you depends on the freezer and the pie:
- Shells in metal pans for single-crust pies (pumpkin, pecan, sweet potato). Crimp the edge before freezing. Nest the pans with parchment or two layers of freezer paper between them, then wrap the stack or slide it into a bag. Both King Arthur and K-State describe stacking them this way.
- Disks, when space is tight or you haven't decided which pie each one is for. They need the most work later.
- Rolled rounds, frozen flat. K-State freezes them on a lined piece of cardboard with freezer paper between the layers and thaws them in the fridge before shaping. King Arthur rolls top crusts into a loose tube, which thaws faster than a disk because it's thin.
K-State freezes pies before wrapping them and wraps them once they're solid. Do the same with shells: a hard shell doesn't dent under plastic wrap, and the crimped edge survives being stacked.
Can you bake pie crust from frozen?
Yes, if it's already shaped in a metal pan. Fill it and bake it as it is. King Arthur says to add a few minutes to the pie's total bake time, and that a parbaked crust, such as one blind-baked for pumpkin pie, goes into the oven frozen too. Gold Medal Flour goes further and says not to thaw unbaked crusts at all. With a pumpkin pie, the filling tells you when those extra minutes are up: how to tell if pumpkin pie is done has the signs.
Don't prick a frozen shell that you're about to fill. K-State says pricking frozen pastry makes it break. Prick only a shell you'll bake empty, and do it before it goes into the freezer.
A whole unbaked fruit pie bakes from frozen too, with more time. K-State gives two methods, and both start hot:
- 25 minutes at 425°F (220°C) in the lower third of the oven, then 350°F (175°C) in the center until done.
- 15 to 20 minutes at 450°F (230°C), then 20 to 30 minutes at 375°F (190°C), until the top crust is brown.
Set the pie on a baking sheet to catch the juice. K-State leaves the top crust uncut in the freezer and cuts the steam vents right before the pie goes in.
The glass pie plate problem
Glass is where the advice splits. Pillsbury recommends a glass or dull-metal pan for the best browning, and its refrigerated crusts suggest glass. But the Pyrex FAQ says a dish shouldn't go straight from the freezer to the oven: let it come to room temperature first, and always put it into a fully preheated oven. Pyrex warns against sudden temperature changes, and says its soda-lime glass is slightly less resistant to extreme changes than its borosilicate glass.
So freeze shells in metal. King Arthur is happy with disposable foil pans, but Pillsbury says shiny metal and foil reflect heat and brown the crust less, so a dull aluminum or steel pan is the better buy. If your only pie plates are glass, freeze the dough as disks and fit it into the glass on baking day, or give a frozen glass-plate shell time on the counter while the oven heats.
How to thaw frozen pie dough without it cracking
Overnight in the fridge. Move disks and rolled rounds from the freezer to the fridge the evening before you bake, as both King Arthur and K-State do. King Arthur's prep guide also allows the counter, until the dough is still cool but no longer solid, if you've forgotten.
Cold dough cracks at the edges when you roll it. King Arthur's recipe says dough that's been chilled for a long time should sit at room temperature for 10 to 15 minutes before rolling, so the butter softens a little. If the edge still splits, pinch the cracks closed and keep rolling.
Store-bought refrigerated crusts have their own timings on Pillsbury's product page: 15 minutes on the counter straight from the fridge, or 60 to 90 minutes from the freezer before unrolling. Pillsbury says not to microwave frozen crusts.
Watch out: Don't refreeze dough that has thawed. Pillsbury's advice is to bake a thawed crust, let it cool completely, then wrap and freeze the baked shell. It goes back into the oven for a filled one-crust pie later.
When to make pie crust for Thanksgiving
Make and freeze it in the first half of November, and keep Thanksgiving week for the fillings. The Thanksgiving cooking timeline puts pie dough in the freezer two weeks out, with the gravy base and roll dough, and bakes the pies on Wednesday. How to plan Thanksgiving dinner starts that plan from the guest count.
Count crusts before you buy butter: a double-crust apple pie needs two rounds and a pumpkin pie needs one. The recipe scaler takes a batch to two or three times without the arithmetic, and the Thanksgiving grocery list already warns that the potatoes, stuffing, rolls, crust and turkey all draw on the same butter.
In Hedgehog Chef's meal planner, put “pie dough” on a Saturday in early November and the pies on Wednesday the 25th, and set a reminder for Tuesday evening to move any disks to the fridge. The frozen shells can go into the pantry under the freezer with an expiry date, so “Use it up” lists them before they pass 2 months.
Questions people ask
Can you freeze store-bought pie crust?
Yes. Pillsbury gives instructions for its refrigerated crusts when they're frozen: let the pouch stand at room temperature 60 to 90 minutes before unrolling, and don't microwave it. Straight from the fridge, it needs 15 minutes.
Can you freeze a baked pie crust?
Yes. Pillsbury says to bake the crust, cool it completely, then wrap it tightly and freeze it. Gold Medal Flour thaws a baked crust unwrapped at room temperature, or warms it at 350°F (175°C) for about 6 minutes.
Can you freeze an unbaked fruit pie?
Yes, for up to 3 months according to Gold Medal Flour. K-State says unbaked pies keep a fresher fruit flavor than pies baked before freezing. Freeze it before wrapping, don't cut the vents until baking day, and bake it from frozen.
Can you freeze pumpkin pie dough in the pan and fill it later?
Yes. Freeze the shell in a metal pan, then pour the filling into the frozen shell and bake, adding a few minutes. King Arthur also freezes the shell parbaked and fills it without thawing.
Is frozen pie dough safe after 3 months?
Yes, if it stayed frozen. The USDA says food kept at 0°F (−18°C) stays safe indefinitely, and the time limits are for quality. The USDA also says some foods frozen too long develop a rancid or off smell, and those should be thrown out.
