Does pumpkin pie need to be refrigerated?
Supermarkets stack pumpkin pies on tables by the bakery, nowhere near a fridge, so you might assume the one cooling on your counter can stay there overnight. A homemade pie can't. It has 2 hours out of the fridge, it keeps 3 to 4 days in it, and the pies on the store's table are made with different ingredients so they can sit out.

The quick answer
Yes. Pumpkin pie is a custard made with eggs and milk, so a homemade one needs to be in the fridge within 2 hours of coming out of the oven, where it keeps 3 to 4 days. Store-bought pies sold at room temperature are made with preservatives to stay on the shelf: follow their label, and refrigerate them once you get them home.
- Room temperature: 2 hours in total, or 1 hour if it's above 90°F (32°C).
- Fridge: 3 to 4 days from the day it was baked, covered.
- Freezer: 1 to 2 months, but expect a grainy filling and a soft crust.
- A pie left out overnight goes in the bin, however good it looks.
- Pecan, sweet potato, custard and cream pies need the fridge too.
How long can pumpkin pie sit out?
2 hours, or 1 hour when the room is above 90°F (32°C). That's the USDA's limit for any perishable food in the danger zone between 40°F and 140°F (4°C and 60°C), where bacteria multiply fastest. K-State Research and Extension explains why pumpkin pie is perishable: it's a custard-style pie made with eggs and milk, both high in moisture, and left at room temperature it invites bacterial growth.
The USDA's leftovers guidance starts that clock when hot food comes out of the oven. A pie that cools on the rack for 90 minutes has 30 minutes left before it needs the fridge. The same clock runs for everything else on the table, as our post on how long food can sit out explains.
Overnight on the counter is far past the limit, so throw it out. The USDA says bacteria in that temperature range can double in number in as little as 20 minutes, and a night on the counter is 8 hours or more of it.
Food safety: The 2 hours add up across the days. If Wednesday's pie sat out 90 minutes to cool, it has 30 minutes on Thursday's table. Cool it for an hour instead, and it has an hour left for dessert.
How long does pumpkin pie last in the fridge?
3 to 4 days after baking. That's the figure for pumpkin and pecan pie on FoodSafety.gov's cold storage chart, and King Arthur Baking gives the same 3 to 4 days for pumpkin, custard and other pies made with eggs or dairy. Count from the day it was baked: a Wednesday pie is good through Saturday, and Sunday at the outside.
Keep it covered, as King Arthur's pumpkin pie recipe says. Plastic wrap or an upturned bowl keeps the filling from drying out and picking up fridge smells.
| Pie | Counter | Fridge, 40°F (4°C) or below | Freezer, 0°F (−18°C) |
|---|---|---|---|
| Pumpkin, sweet potato, pecan (made with eggs) | 2 hours | 3 to 4 days | 1 to 2 months for pumpkin and pecan, for quality |
| Custard, cream and chiffon | 2 hours | 3 to 4 days | Don't freeze |
| Fruit pies made with sugar (apple, berry) | 1 to 2 days, covered | 1 to 2 more days | Up to 4 months |
| Store-bought, sold at room temperature | Per the label | Once home and once cut | Per the label |
| Frozen store-bought, baked or thawed | 2 hours | Up to 3 days (Marie Callender's) | Don't refreeze |
The fruit pie times are King Arthur's and the UC Master Food Preservers' (sugar is what lets a fruit pie sit out). The pumpkin, pecan, custard and chiffon times are FoodSafety.gov's. UC's sheet puts every pie made with eggs in the fridge for up to 4 days, sweet potato included, and adds cream pies to the ones that don't freeze well.
If you lose track of which day the pie was baked, the 4 days are gone before you notice. In Hedgehog Chef's pantry, add the pie to the fridge with an expiry date 4 days from baking day, and “Use it up” lists it when the date gets close.
Does store-bought pumpkin pie need to be refrigerated?
It depends on where the store kept it. A pie sold on an open table at room temperature is made differently from yours. K-State Research and Extension, quoted by Farm and Dairy, says commercial pumpkin pies displayed at room temperature have to be made with shelf-stable ingredients such as preservatives and antimicrobials, and carry a sell-by or use-by date.
The same extension advice is that these pies still do best in the fridge once you've bought them, before and after they're cut. UC's Master Food Preservers add that some commercial pies include preservatives and some don't, so read the label for that pie's storage instructions.
- Sold at room temperature, with storage instructions: follow the label, and put it in the fridge when you get home. Keep it there once it's cut.
- Sold from a refrigerated case, or from a bakery that bakes with fresh eggs and milk: treat it like homemade. 2 hours out, 3 to 4 days in the fridge.
- Frozen pies: Marie Callender's says to keep its pies frozen until you use them, refrigerate the rest for up to 3 days after baking or thawing, and not refreeze them.
No label and no idea how it was made? Treat it as homemade.
Can you freeze pumpkin pie?
Yes, safely, but it won't be as good. FoodSafety.gov gives baked pumpkin pie 1 to 2 months in the freezer for quality, and food held at 0°F (−18°C) stays safe beyond that. The texture is the problem. The UC Master Food Preservers say pumpkin and pecan pies keep “moderately well” frozen for up to 2 months, but the crust may go soggy and the filling may separate.
America's Test Kitchen tried it and gave up: the thawed custard was grainy and wet, and the extra water soaked the crust. An unbaked pie frozen and baked later did the same. Its explanation is that egg proteins can't hold on to their water once they've been frozen and thawed.
So don't freeze the pie you're planning to serve. Freeze what freezes well instead: the crust, shaped in its pan, which our post on freezing pie crust covers. King Arthur says pumpkin pie filling keeps overnight in the fridge, so you can mix it the day before baking.
For leftover slices you won't finish in 4 days, the freezer still beats the bin. Wrap them tightly, and thaw them in the fridge, as UC advises, then eat them cold. Custard and chiffon pies are different: FoodSafety.gov's chart says not to freeze them at all, and UC says cream pies don't freeze well either.
How to tell if pumpkin pie has gone bad
Go by the date first. On day 5 it's past the limit, whatever it looks like. Washington State University Extension points out that the bacteria behind food poisoning generally don't change how food looks or smells, so a pie that seems fine can still be unsafe.
Before that, throw it out if you see mold, or if it smells sour. Don't scrape the mold off and eat the rest: the USDA's guidance on moldy food says to discard soft, porous foods like baked goods, because mold can spread below the surface where you can't see it.
A pie that sat out overnight goes too. So does one nobody can date: if you can't remember when it was baked, count it as past.
Pumpkin pie on Thanksgiving: a plan that keeps it safe
Bake it on Wednesday and it's good from Thursday to Saturday, Sunday at the latest. For Thanksgiving on Thursday, November 26:
- Bake the pie on Wednesday, cool it on a rack for about an hour, then cover and refrigerate it. The USDA says hot food can go straight into the fridge, so a pie that's still a little warm goes in anyway, and it finishes setting overnight. Our guide to telling when pumpkin pie is done covers taking it out at the right moment.
- On Thursday, take it out when dessert is served, and put it back within the hour it has left.
- Friday and Saturday, eat the leftovers cold from the fridge.
- Finish it or freeze it on Sunday.
The pie isn't the only leftover that weekend, and the others don't all expire on the same day. The Thanksgiving cooking timeline lays out the cooking days. Put each leftover in Hedgehog Chef's pantry under the fridge, with the date it has to be eaten by, and the pantry shows what's about to expire first. Then add “Leftovers” to Friday and Saturday in the meal planner, so nobody cooks something new while the pie and the turkey wait.
Questions people ask
Is pumpkin pie OK if it was left out overnight?
No. Homemade pumpkin pie is made with eggs and milk, and the USDA's limit for perishable food at room temperature is 2 hours. After a night on the counter it should be thrown out, even if it looks and smells fine.
Does pecan pie need to be refrigerated?
Yes. Pecan pie is made with eggs, and FoodSafety.gov's chart groups it with pumpkin pie: 3 to 4 days in the fridge after baking and 1 to 2 months in the freezer. King Arthur Baking says to refrigerate it too.
Does sweet potato pie need to be refrigerated?
Yes. It's a custard pie made with eggs and milk, like pumpkin. The UC Master Food Preservers put all pies made with eggs in the fridge, for up to 4 days.
Can you put a warm pumpkin pie in the fridge?
Yes. The USDA says hot food can go straight into the refrigerator. Letting it cool on a rack first helps the center set, but don't let that stretch past 2 hours from the oven.
Can you make pumpkin pie filling ahead and refrigerate it?
Yes, for one night. King Arthur Baking says pumpkin pie filling keeps overnight in the fridge, so you can mix it the day before and pour it into the crust when you bake. Keep it covered in the meantime.
